INSTRUCTIONS
- Roast the seasoned tenderloin and massaged with oil in an oven at 160 degrees for 1 hour, add a little water and raise the temperature to 180 degrees until completely browned.
- Remove the string and cool, cut into thick slices.
- To garnish we can make pumpkin puree, sautéed onions and a few seasoned romaine lettuce hearts.
- Deglaze the roasting juices, serving apart.
